Yeah dude, and there's one dish that's part of bothof our food histories that's perfect.

It could only be our whole salmon, dressed up for abig night out.

Step one, take a fish, this is about a seven-pounder and that'll feed about 14 to 20 people.

第一步,拿出一条鱼,大概2.5公斤,够14到20个人吃

Now it's a simple poaching liquor isn't it?

It is. Not quite so simple as plain water though.

To the fish kettle add a squeeze of lemon juice, drop in the lemons,add some bayleaves,peppercorns and a pinch of salt.

Bring the fish to the boil, turn off the heat, leave it to go cold, let it go cold in its ownjuices,then take that perfectly beautifully juicy poached salmon out and it's ready for workingon.

Meanwhile, shall we show you how to make mayonnaise? OK man, mayo.

Homemade mayo is a thing of wonder and it's easy.

First off we need the yolks of two eggs and one whole egg.

首先加入两个蛋黄和一个全蛋

Now at this point we take that and start to whisk.

Homemade mayonnaise is totally different to the factory stuff.

家庭做的蛋黄酱和工厂做的完全不是一回事

The staple ingredients of mayo are eggs, raw yet again, mustard, sugar, salt, pepper and somelemon juice,but you can make it more lemony or more mustardy or you can even add garlic tomake aioli. Excellent.

主要材料是鸡蛋,生的,芥末,糖,盐,辣椒还有一些柠檬汁,你也可以多加一点柠檬或者芥末,甚至可以加点大蒜

The second the salmon water starts boiling take it off the heat.

第二步是鲑鱼汤开始沸腾,然后关掉火

I'll just put it on the windowsill.

放到窗台上

If you leave it boiling your fish will fall apart like your old Austin Allegro used to.

如果你让他一直沸腾,鱼肉会变碎

Just let it continue to poach gently in the water as it cools.

On with the mayonnaise.

Now we need oil and we found vegetable oil is the best for this.

Now it needs to be added really,really, really slowly and you haveto continue to whisk it.

And of course if you've got an electric whisk it's so easy.

如果有自动搅拌机就会更容易

What's going on here is that you're making an edible emulsion.

你现在在做可食用的乳状物

Normally oil would mix with the other ingredients but egg yolk contains a protein that allowsthe mixing to happen.

通常油不会跟其他的食材混合,但是蛋黄油蛋白质会混合油

It has to do its job very gradually.

必须要慢慢产生效果
