First thing we make in a prawn cocktail is to fabric a seafood sauce.

Fanny's cocktail sauce was just basically ketchup and mayo but we're going a bit more fancythan that.

To loads of mayo add tomato puree and some good squirts of ketchup.

Now our secret ingredient is the kind of often maligned and abused salad cream.

It's a kind of calming fresh taste to balance the richness.
